Ethanol geh\u00f6rt zu den Molek\u00fclsubstanzen aus der Gruppe der Alkohole\/Alkanole. Er besitzt die Summenformel \\( C_{2} H_{5}OH \\). <\/p>\n\n\n\n<pre class=\"wp-block-preformatted\"><iframe style=\"width: 780px; height: 400px;\" frameborder=\"0\" src=\"https:\/\/embed.molview.org\/v1\/?mode=balls&amp;cid=702\"><\/iframe><\/pre>\n\n\n\n<p><strong>Ethanol ist mit Wasser in jedem Verh\u00e4ltnis mischbar.<\/strong> Dabei kommt es jedoch zu einer Vermischung von unterschiedlich gro\u00dfen Molek\u00fclen, wobei kleine Molek\u00fcle in die Zwischenr\u00e4ume gro\u00dfer Teilchen eingelagert werden. Diesen Effekt nennt man <strong>Volumenkontraktion<\/strong>. Aus 50ml +50ml werden 96ml. Auf deren Oberfl\u00e4chen leben Hefepilze, die in ihrem Stoffwechsel Zucker(Glucose) zu Ethanol umwandeln.
